Saturday night the hubs and I decided to cook something new. We have gotten in a rut and tend to cook the same things week after week. We were also in the mood to finish up Season 5 of Game of Thrones so we could move on to Season 4 of the Wire and not be in the kitchen a long time either. I told him about my friend, Kristine’s, recent post on Facebook about Lamb Meatballs. We were both intrigued. Off to the store he went . . . . . . . because I’m a lucky gal with a husband that does the grocery shopping for me. Oh, how I love him!
This paleo recipe came from Diane Sanfilippo of Balanced Bites. We added to the lamb mixture a little more garlic and some feta cheese (because that’s how we roll – get it – roll – meatballs – haha). Rolled it into balls and put it in the cast iron skillet in the oven. While that was cooking we made some couscous, threw in some oregano, chopped tomatoes, chopped cucumbers, and greek olives for a warm salad.
This was yummy and oh so simple. It was perfect for sitting on the couch with a bowl of warm goodness watching the mother of dragons ride away in the sky on one of those said dragons.
